Parmensan Chicken


  • Cook 4 to 6 skinless, boneless chicken breasts on
    medium high in two tablespoons of butter,
    browning on both sides. Cover and turn to low.

    In a small bowl combine:

  • cup sour cream
  • 1 tsp. garlic powder
  • tsp. onion powder
  • tsp. chili powder
  • 1 Tbs. Corn starch
  • 3 Tbs. Parmesan cheese (powder)


    Blend well, and then stir in 1 can of diced tomatoes.
    Add mixture to chicken and simmer on medium low
    for 15 minutes. Stir occasionally so it doesn't scorch.
    Serve with warm rolls or mini biscuits.
