Mixed Bean Soup


  • 2 cups assorted dry beans
  • 1 large can whole tomatoes
  • 1 chopped onion
  • 1 ham hock or 1/4 lb bacon or ham
  • Directions:

    Soak beans overnight in cold water. In the morning,(or about 4 hours before dinner) drain beans andcover with water. Cook with ham for several hours until beans are tender. Then add tomatoes, onion, garlic to taste and 1 tsp chili powder if desired. Go ahead and make a big pot; this just gets better every time you re-heat it.
