Enchiladas de Pollo

Ingredients:

  • 2 cups cooked, cubed chicken
  • 2- 4 oz. cans chopped green chilies
  • 1/4 to 1/2 cup salsa verde
  • 1/2 teaspoon salt or garlic salt to taste
  • 12 corn tortillas
  • 2 cups warmed whipping cream
  • 8 oz. grated monterey jack cheese
  • Directions:

    Preheat oven to 300 degrees. Combine chicken, chilies, salsa, and salt. Dip each tortilla in warm cream. Fill center of each tortilla with chicken mixture. Roll and place in a 2- quart glass baking dish. Pour remaining cream over tortillas. Top with grated cheese. Bake 10 - 15 minutes or until warm and bubbly. Serves 6.
